Pandan-Flavored Salted Duck Egg Innovation Leads Hasanuddin Vocational Students to Win Bronze Medal at PENA 2026

Makassar, May 3, 2026 — Another proud achievement has been made by students from the Livestock Production Technology Study Program and the Food Crop Production Technology Study Program, Faculty of Vocational Studies, Hasanuddin University. At the Pekan Essay Nasional (PENA) 2 2026, held on May 2–3, 2026, at Universitas Dhyana Pura, Bali, the student team successfully won a Bronze Medal in the poster competition under the food subtheme category.

This competition was attended by students from various universities across Indonesia, presenting innovative ideas related to national strategic issues. The team, consisting of Dimas (team leader), Dewi Fortuna Murti, and Ferdhy Iskandar from the Livestock Production Technology Study Program, along with Ahmad Faisal from the Food Crop Production Technology Study Program, introduced an innovation titled the development of pandan-flavored salted duck eggs using an oven method with hedonic and hedonic quality testing approaches.

This innovation aims to increase the added value of livestock products, particularly duck eggs, through more appealing flavor diversification that is better accepted by consumers. The use of pandan aroma not only provides a distinctive local characteristic but also enhances the product’s sensory appeal. Through hedonic testing, the product is evaluated based on consumer preference in terms of taste, aroma, texture, and color, while hedonic quality testing assesses the product’s quality more objectively.

This innovation also aligns with the Sustainable Development Goals (SDGs), particularly the Zero Hunger goal, which emphasizes the importance of accessible, nutritious, and sustainable food. By introducing an innovative processed duck egg product, the students aim to contribute to strengthening food security, especially in Eastern Indonesia.

This achievement would not have been possible without the guidance of the supervising lecturer, Anggun Permata Sari, S.Pt., M.Pt., as well as support from the Head of the Livestock Production Technology Study Program, Syamsuddin, S.Pt., M.Si., and the Head of the Food Crop Production Technology Study Program, Eka Setiawan, S.Si., M.Si.

Winning the Bronze Medal serves as proof that vocational students are capable of producing scientific work that is not only creative but also practical and impactful. The Faculty of Vocational Studies at Hasanuddin University expressed its appreciation for the team’s hard work and hopes that this achievement will inspire other students to continue innovating and contributing to society.
